Morrocan Tomato Dip


2 cloves garlic, minced
1 onion, diced
3 tbl oil
1 jar of roasted peppers
1 can of diced tomatoes or Pomodoro-type tomatoes
1 tsp salt
1 tsp brown sugar
1 tbl Cool Harissa Spice Blend


Heat the oil in a skillet. Saute the onions, garlic, and peppers. Add the diced tomatoes or hand crush the canned Pomodoro tomatoes to the skillet. Simmer 5 minutes. Season with salt and brown sugar. Simmer another 2-3 adding the Cool Harissa Spice Blend for the last minute. This can be served warm as is or made smoother in a blender.

Serve with pita, fresh bread, or challah.
