Here’s an easy method for quickly cooking fish fillets.
Ingredients serve 2
⅓ cup flour, all-purpose
½ tsp salt
black pepper, ground to taste
½ -¾ pound fish, haddock fillets, sole or other white fish, cut into 2 portions
1 tbl extra-virgin olive oil
Sauce
Directions
2 tbl mayonnaise
½ tsp Cool Harissa Spice Blend, divided in half
½ tsp lemon juice
Make the sauce by mixing mayonnaise, ¼ tsp spice blend, and lemon juice.
Combine flour, salt, pepper in a shallow dish; thoroughly dredge fillets (discard any leftover flour).
Heat oil in a large nonstick skillet over medium-high heat. Add ¼ tsp spice blend to oil and quickly stir. Add the fish, working in batches if necessary, and cook until lightly browned and just opaque in the center, 3 to 4 minutes per side. Serve immediately and top with sauce or have on the side.
