In general, the best wines to pair with southwestern-flavored dishes are low in alcohol, aromatic, and often with some residual sugar if there is any hotness to the recipe spices.

Such wines might include Riesling (off-dry), Viognier, Chenin Blanc (off-dry), White Zinfandel, Brachetto (off-dry), Moscato, Lambrusco (off-dry), Pinot Grigio and oaked Chardonnays. If the recipe has citrus such as lemon or lime in it, Sauvignon Blanc, Dry Riesling, Albarino and Pinot Gris and many dry rose wines and southern Rhone red wines pair well.

If the dishes are not acidic but have a deeper savory taste or a fair amount of cumin flavor, use a low alcohol merlot, Spanish Rioja, Tempranillo. at alcohol levels of 13.5% or less.
