Cherry Tomato Salsa


1/2 small red onion diced
15 cherry tomatoes cut in halves, quarters or diced or a 15.5 oz can of diced tomatoes
1 tsp red wine vinegar
2 tsp Cool Southwestern Spice Blend
1 tsp olive oil
pinch of salt
Optional: 1/4 tsp garlic powder
1/4 tsp onion powder
garnish with cilantro


Add the red wine vinegar to a small bowl and add the Cool Southwestern Spice Blend and mix. Add the olive oil and the rest of the ingredients to the bowl and gently toss. Let marinate for 30 minutes. Serve with tortilla chips.
