Quick Quesarito

To mimick Taco Bell’s Quesarito (a combination of a quesadilla and a burrito:

Ingredients serve 1

2 small flour tortillas
1/2 cup shredded cheddar cheese, Monterey Jack or Peppered Jack cheese
1 tbl butter
½ -1 small can (6-10 oz) hotdog meat chili
(or ¾ cup Bush’s Chili Kidney or Black beans in mild chili sauce smashed or blended)
2 tbl nacho cheese sauce
1 pk (about 4.4 oz) Minute® Long Grain Microwaveable White Rice Bowl
(or any of Minute Rice’s Cups of jasmine, brown, basmati, etc. which come in 2 packs)
½ tsp Cool Southwestern Spice Blend
2 tbl sour cream


To start, make a cheese quesadilla with two flour tortillas and cheese.
Add cheese to a flour tortilla, top with another tortilla, and warm in microwave 30 seconds or in a skillet over medium heat about 2 minutes. Remove to a large plate or small plastic cutting board.

Meanwhile, add one tablespoon of butter to the skillet and then the quesadilla. Cook until lightly browned 2-3 minutes. Flip and cook the other side until it’s lightly browned.

Place the hot dog chili or beans in a small bowl. Add the Cool Southwestern Spice Blend and the queso cheese to it, stir and place it and the rice bowl in the microwave on high for 1 minute. Remove the chili/beans. Remove the cover from the rice bowl and stir the cheese and spice blend and return both to the microwave on high for 30 seconds. Remove rice and stir again. Remove the quesadilla to a plate or cutting board.

Add rice to one end of the quesadilla and then the hot dog chili or chili beans. Then add the sour cream over the chili.

Roll quesadilla from the chili end.

You can also add in guacamole, tomatoes, pico de Gallo, salsa verde or tomatillo sauce, lettuce, and more. Customize your this any way you like!

For an evening meal, use the hot dog chili in the Quesarito and additionally serve some heated chili beans on the side.
