Spicy Salsa, Rice and Beans

Ingredients serve 2

One 15.5 oz can of black or pinto beans, washed, your choice of type
optional: 1 cup bottled salsa (red or green)
2 cups cooked (or leftover) rice
2 tbl apple cider or white or rice vinegar
2 tbl Cool Southwestern Spice Blend


Place vinegar in a bowl and add Cool Spice Blend and salsa and mix. Add beans and rice to bowl and mix. Heat in microwave for 1 1/2 minutes or stovetop for 5 minutes.
